Stewart Keaton

Captain

Stewart grew up immersed in the culinary wonders of the Pacific Northwest. He began his restaurant career at 18, working for family friend and Seattle legend chef Wayne Johnson (Andaluca, FareStart). His path in the industry blossomed in Los Angeles while attending UCLA, earning his BA in Political Science. There he worked for notable chefs Erwin Tjahyadi (Komodo, Bone Kettle) and Margarita Manzke (Republique, Manzke) before moving to New York City. He has continued his career as a server at New York hotspots, including national brand Sugarfish and James Beard nominated Shuka, before working closely with Emmeline Zhao (Little Tong, Silver Apricot, Figure Eight) and chef Joe Bliffen (Roberta's, Pizza Moto) since 2022 at several of their concepts. He is currently the Front of House Captain at their newest West Village spot, Cora.
